I don't like to fidget with food, so I don't remove the skins from the tomatoes. Just chop them up, whiz them in the blender. Add a little citric acid if desired to keep fresher longer, but not too much as this will cause bitterness. Freeze in ice cube trays. Remove when frozen and place into freezer bags. These tomato cubes can later be added to soups, stews, smoothies, juice drinks and the like. A tomato cube can be added into a fruit drink and it won't even be detectable to taste.
