1 1/2 cups unbleached white flour ,1 1/2 cups barley flour, 4 teaspoons baking powder, 3/4 teaspoon sea salt ,1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1 1/3 cups shredded unsweetened coconut, 1 1/2 cups organic milk, 1 cup organic sugar, 1 organic egg, 2 tablespoons virgin coconut oil, 1 teaspoon vanilla extract
- Preheat oven to 350 degrees
- Mix sugar, egg, oil and vanilla extract together blending well. Add milk, flour, baking powder, salt, cinnamon, nutmeg and coconut into batter. Mix just until blended.
- Bake in loaf pan until toothpick inserted into middle of loaf comes out clean. (About 1 hour)
- Cool & invert to remove and continue to cool until easily sliced.
